Tuesday's Painting

Made a big pot of curried coconut squash soup yesterday. It was delicious and there is plenty left over for tonight's supper! Yay. Especially nice when you don't really feel like cooking anything. It is so easy to perk up a good soup into something really great using a can of (lite) coconut milk. I love that. I just have to open, dump, stir and voila, an exotic concoction! Especially nice when you don't really feel like cooking anything. Another tip is "fresh" ginger. It can really liven up a dish.
