Starry Night


Mediterranean Kitties available on eBay

Made this other other night and really enjoyed it. Roasted Beets nSweets I added garlic cloves and some parsnips and carrots. At the end I splashed on a glug of basalmic vinegar but that might not be to everyone's taste. Putting it here so I can find it again. I bet it would make a good soup too if you added stock and then pureed.

Cold and clear today. Snow this afternoon. I can really see the quality of light changing. Even though the weather feels like, looks like and is Wintery, the light is telling me things are changing:)
